Bacon should contain less water according to EU regulation

The European Union has decided that Bacon may contain no more than 5% water. In the English Bacon the avarage is about 8%. Campaigners for 'Real Food' and the consumers are enthusiastic about the new regulation. Supermarkets and meat producers foresee sacrificing the quality of the bacon. The sale of bacon where extra water is added also will be permitted, but the package must be clearly state this. The amount of water in bacon ranges from 3 to 13% now.

Bacon Producers are afraid that by the new rules have to adapt their production methods, extra investment must be made. They argue that adding water is necessary to ensure that the salts are well spread when smoking the meat.

Equimex's conclusion to this article is that yes new investments must be made. The FlavorJet is the perfect machine to inject into bacon with a high precission, a good spread of the salts and tubling becomes something of the past.
